Coconut flour biscuits

Coconut flour has a naturally sweet flavour, which makes these biscuits savoury with a hint of sweetness.

This is one of the easiest recipes you’ll find in our cookbook. They might seem plain, but they can be helpful if you feel nauseated and need a light snack to ease the stomach.
 
Recipe from The Living Kitchen, Robinson £18.99
  • Preheat the oven to 180°C and line a baking sheet with parchment paper.
  • Put all the ingredients into a food processor and pulse until a dough forms. You can also mix the ingredients together in a bowl by hand.
  • Take 1 tablespoon of dough, roll it into a ball, and flatten. Continue to do this until all the dough has been used.
  • Place the biscuits on a baking sheet and bake for 12 minutes, or until they are slightly golden on top.
  • Let the biscuits cool completely before storing in an airtight container. You can keep them in the fridge for a few days. They taste best when warmed up. Since they can be dry, these biscuits are best eaten with a drink. 
 
Nutrition Note: 
Coconut flour is a great high-fibre, gluten-free, grain-free alternative to traditional flours, although it acts very differently than something like wheat flour. Coconut flour absorbs a significant amount of water, so you need only a small amount of it.

4 tbsp virgin coconut oil, softened

1 egg

¼ tsp sea salt
