Recipe: Raisin biscuits

Made with store cupboard ingredients and using oil, this is an ideal recipe for a Chanucah family tea. They can be made in advance and kept in an airtight container or frozen.
Preparation time: 15 minutes
Cooking time: 20 minutes
Makes approximately 65
Ingredients
● 200ml rapeseed oil
● 130g brown sugar
● 1 tsp ground cinnamon
● Zest of ½ orange
● 1 tsp baking powder
● Juice of 1 orange
● 3 tbsp brandy
● 75g almonds, coarsely ground
● 75g raisins
● 500g plain flour
Method
● Preheat the oven to 165˚C
● Line two oven trays with baking parchment.
● In a food processor mix the oil, sugar, cinnamon, orange juice, zest, baking powder and brandy.
● Stir in the almonds and raisins and slowly add the flour until the dough becomes soft and smooth.
● Take pieces of dough the size of a walnut and shape into round biscuits. Flatten slightly with a fork.
● Bake for 20 minutes or until golden brown.
